At the heart of Dawn Ranch, The Lodge at Dawn Ranch is a restored 1900s lodge which hosts the resort’s on-site restaurant, a concept by Argentinian restaurateur, Chef Fernando Trocca and helmed by Chefs Juliana Thorpe and Ignacio Zuzulich. Inspired by his South American heritage, Trocca’s menus center on the concept of “the revolution of simple.” The Lodge’s cuisine is vegetable-forward, combining open-fire cooking with a global flare and seasonal, local procurement, including from Dawn Ranch’s own on-site Kitchen Garden.
